Date Newtons

Years ago, I would make Fig Newtons for my family. My fig Newtons recipe was inspired by a vegan blogger. This is very similar.


This particular Date Newton recipe was recently shared by a friend and cake artist Zulekha at a cake magazine show. I am sharing that exact same recipe with you, I just elaborated the method to make it easier to follow. It works perfectly!





Date Filling:

500 gms dates

I tsp cinnamon powder

1-2 tbsp soft butter


Deseed the dates put them in a food processor add

cinnamon powder and blend it till it looks like a dough.

Remove it in a bowl add the soft butter and knead it

in a dough.





Cookie dough:

1 32 gms butter

85 gms icing sugar

245 gms flour

I tsp vanilla essence

Milk I to 2 tbsp if required


Method:

Beat butter and sugar till light and fluffy.

Add flour and beat till crumbly.

Combine the crumble add milk if required to make it into a dough. Set the dough aside in the refrigerator for 10 mins, it makes it easier to work with.





Divide the dough into 3 parts.

Take 2 parchment papers, Place the parchment paper on a flat surface, take one part of the dough, now place another parchment paper on top and roll into a rectangle 12"x4" long and wide.

Remove the top layer of parchment paper and spoon 1/3 of the date paste down the center of the cookie dough in a straight line going lengthwise.

From the bottom, lift the sheet of parchment paper that’s under the cookie dough to help fold the bottom edge of the cookie dough up over the fig filling. Then use the same method to fold the top edge of the cookie dough down overlapping the bottom edge so that the fig filling is wrapped completely with the dough.

Use the parchment paper to flip the cookie roll over so the seam is on the bottom. Place the rolls in the refrigerator for 1/2 hour, it just gives neat and clean cuts.

Use a sharp knife to cut the roll into cookies about 2″ long.


Place the cookies on the prepared baking sheet and bake for 13 – 16 minutes until golden on the bottom. Remove from the oven and let cool on pan.
