Frozen Banana bites


A dollop of peanut butter sandwiched between banana slices coated with melted chocolate and sprinkled with LOVE and nuts!

This is such a simple treat to make and tastes delicious. If you haven’t tried frozen banana treats then please take five minutes to prepare this healthy snack!




Ingredients

  • 3 ripe bananas

  • 1/3 cup natural peanut butter

  • 3/4 cup dark chocolate/ carob chips

  • 1/4 cup coarsely crushed roasted peanuts

  • 2 teaspoons coconut oil






Method

Peel and slice bananas into rounds about 1/4 inch thick.

Place about 1/2 teaspoon of peanut butter on a banana slice and top with another banana slice to make a little banana peanut butter sandwich. Keep doing this until all banana slices are used and you have about 30 bites. Freeze these banana bites for an hour.


Melt chocolate/carob by adding chocolate and coconut oil to a microwave-safe bowl. Microwave for 1 minute, stir and microwave in additional 30-second increments until chocolate is completely melted. This shouldn’t take more than 2 minutes of microwave time.

You can use a double boiler method also to melt the chips

Once the chocolate is melted, remove the frozen banana bites from the freezer. Dip each frozen banana bite into the melted chocolate so that each banana sandwich is completely coated.


Sprinkle with coarsely crushed roasted peanuts. Place chocolate-covered bites back in the freezer for about 15 minutes to harden up.

You can transfer the bites into a freezer-safe storage container for later.  They should last a least 1-2 months in the freezer.





A few tips and variations: 

  • Choose a banana that’s ripe but still firm. If it’s not ripe enough, it will not be as sweet. If it’s too ripe, it will be difficult to work with.

  • If the chocolate starts to harden and it becomes more difficult to coat the sandwiches, re-melt it

  • Carob: I normally only use carob but you can use semi-sweet chocolate or even white chocolate.

  • Other nut butter: Peanut butter is my favorite to use with chocolate and bananas but you can use any nut butter like almond butter, cashew butter, or sunflower seed butter.
