This is a dry subj, no extra water is added. A perfect blend of spices enhances the flavors in the vegetables. Give it a try!!
You will need
5 Cups Green beans cut
3 Potatoes peeled and cut
1 TBSP Ghee
1 TBSP Ginger grated
1/2 tsp Mustard seeds
1/2 tsp Turmeric Powder
1/4 tsp Red Chilli Powder
1 tsp Garam Masala
1 tsp Corriander powder
a pinch of hing
salt to taste
1 tsp Dry Mango/ Amchur Powder
Method
In a pan, heat the ghee and add the mustard seeds, when the mustard seeds start to crackle add a pinch of hing and ginger. Sautee for about 20 seconds.
I love this hing, I have been using it for years now. It is so strong and pure, you need to use only a pinch.
Now add the green beans.
Add the potatoes
Now add the turmeric, red chili, Garam Masala, coriander powder, and salt.
Stir and cover the pan with a lid and let it simmer for 10-12 min, stirring occasionally.
Simmer the subji, till the beans have changed color and the beans and potato have become soft. Now add the dry Mango powder.
Stir well. Garnish with Corriander. Offer to the Lord and enjoy His many gifts.
