Parsi Mawa Cake

Mawa cake is a delicious crumbly moist cake made using Khoya or Mawa. It is famous in various Parsi/Iranian bakeries in Mumbai and Pune and it tastes delicious. Made using yogurt, all-purpose flour and mawa this cake is sure to give your taste buds the love they deserve!


To make Mava

Milk Powder – 200 gm

Heavy Whipping Cream – 250 ml


Method

Mix milk powder and cream to make a lump-free mixture.

Cook this mixture for 7-10 mins on a gas stove, till it gets a soft crumbly texture. Stir constantly while cooking. Allow it to cool completely.




For The Cake:

Fine (Very Important) Fine Sooji – 1 1/2 cups

If the semolina is not fine, your cake will be crumbly

Yogurt – 100 ml

Milk – 100 ml

Baking Powder – 1 1/2 tsp

Cardamom Powder – 2 tsp

Butter – 100 gm melted

Sugar – 150 gm

Nuts (Pistachios & Almonds)- 1/4 cup each or as desired


Method:

Preheat oven to 350°C.

In a bowl, add melted butter, sugar, mava and whisk to form a homogenous mixture. Then add yogurt, milk, and cardamom powder and beat well. Finally, add the fine Semolina and baking powder and stir well.

Transfer batter to the prepared cake tin and sprinkle it with chopped nuts. Gently press the nuts, so they set into the cake batter.

Bake in preheated oven for 45 – 55 minutes. Check with a toothpick and see if it comes out clean. Cover the cake with an aluminum foil and allow it to stand for an hour before transferring the cake to a serving dish. Say a little prayer and serve with some hot milk.
