Til Chikki


Makar Sankranti is the day when the glorious Sun-God begins its ascendancy and entry into the Northern Hemisphere and thus it signifies an event wherein the Sun-God seems to remind that 'Tamaso Ma Jyotir Gamaya'- may you go higher & higher, to more & more Light and never to Darkness.

Makar Sankranti signifies that we should turn away from the darkness of delusion in which we live, and begin to enjoy a new life with a bright light to shine brighter and brighter. We should gradually begin to grow in purity, wisdom, and knowledge, even as the Sun does from the Day of Makar Sankranti.

These crunchy brittles are usually made for Makar Sankranti along with many other sweets. This one is a really easy 10 min sweet. Let's get started.


You will need

  • White Til/Sesame - 1 Cup

  • Sugar - ¾ Cup

I had sugar readily available at home however you can make this same using jaggery too. Just keep the amount of jaggery same as the sesame, so in this case, you would use 1 cup jaggery.

Method

In a pan dry roast the sesame on medium flame until they pop. Then keep aside.


Now in a pan add in the sugar and caramelize it while stirring it until it is golden brown.


I should have used a steel pan, so you could have noticed the amber color of the sugar, however, I just love my cast iron pans :)

Now add the roasted sesame and mix well.


Transfer to a butter paper.


Now smoothen out and start rolling, before the mixture cools down.


Once it has reached the desired thickness, using a sharp knife you can cut into squares, rectangles, or however you like. I went the traditional route and cut into squares. I prefer thin brittles, however, if you like thicker ones, you simply roll to your desired thickness.
